Ingredients
- 2 cups flour
- 1/2 cup sugar
- 1/4 teaspoon salt
- 2 sticks (1 cup) butter, cubed
- 1-1/2 cup sugar
- 1/4 cup flour
- 4 large eggs
- lemon zest from 3 medium lemons
- juice from 3 medium lemons
- 1 pint blackberries
- 1/2 cup water
- 1/4 cup sugar
Instructions
- In a medium saucepan, combine water, sugar, and half the blackberries. Mash the blackberries gently to release their juice. Bring to a boil, then simmer for 5-10 minutes until thickened. Strain into a cup and set aside.
- Preheat your oven to 350°F. In a medium bowl, mix flour, sugar, and salt. Cut in the cubed butter using a pastry cutter until crumbly. Press this mixture into a greased 9x13 pan and bake for about 20 minutes until golden.
- In a bowl, whisk together sugar and flour. Add eggs, lemon juice, and lemon zest, mixing well. Pour this over the crust. Gently swirl in the blackberry syrup and sprinkle fresh blackberries on top. Bake for about 20 minutes until set. Cool in the fridge for 2 hours, then slice and enjoy! Dust with powdered sugar if desired.
