Ingredients

Instructions

  1. In a large slow cooker, combine chicken, carrots, celery, onion, parsley, garlic, Italian seasoning, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  2. Stir in the Better than Bouillon paste and red pepper flakes if you like. If skipping the paste, add extra salt to taste later.
  3. Pour chicken stock over everything and give it a gentle stir. Cover and cook on low for 6-8 hours or high for 4 hours.
  4. Once cooked, shred the chicken using two forks right in the pot. You can also remove it to shred on a cutting board if that's easier.
  5. In a small bowl, whisk together cream and 1 tablespoon of cornstarch. Add this to the soup along with the gnocchi and spinach. Stir well and cover, cooking on high for another 30-45 minutes.
  6. Remove the lid and stir the soup. For a thicker consistency, mix up to 1 tablespoon cornstarch with an equal amount of cool water, then stir this in.
  7. Taste the soup and adjust seasoning with more salt and pepper as needed. A squeeze of lemon juice or fresh basil can enhance the flavor too.
  8. Serve the soup in bowls and top with crumbled bacon if you like. Enjoy!
