- 1 onion (diced)
- 3 teaspoons minced garlic
- 2 teaspoons salt
- ¼ teaspoon black pepper
- 1 teaspoon oregano
- 4 cups chicken stock
- 26 ounces spaghetti sauce
- 14 ounces diced tomatoes (drained)
- 4 ounces cream cheese (room temperature)
- ¼ cup fresh basil (roughly chopped, divided)
- 1 ½ cups whole wheat elbow macaroni (or regular elbow macaroni)
Instructions
- In a large skillet over medium heat, brown the ground beef with the onion until the beef is cooked through. Add the garlic and sauté for another minute.
- Season the beef with salt, pepper, and oregano, stirring everything together well.
- Add the chicken stock, spaghetti sauce, and diced tomatoes. Bring the mixture to a simmer and let it cook for 10 minutes.
- Stir in the cream cheese until it's fully blended, then mix in half of the fresh basil.
- Add the pasta, give it a good stir, and cover. Cook for another 10 minutes or until the pasta is tender.
- Serve in bowls and top with the remaining basil.
