- Boil water in a large pot and cook the noodles until al dente according to the package. Drain and set them aside.

- Gradually mix in milk and heavy cream, whisking until everything is blended. Heat over medium until it bubbles and thickens a bit.
- Lower the heat and stir in the cheeses until they melt and become smooth. Toss in the pasta, mixing well. If it's too thick, add 1-2 tablespoons of milk.
- Allow the mac and cheese to sit for 5 minutes to thicken up.
