Ingredients
- 1 1/2 cups onions, bell peppers, celery (I used a frozen Seasoned Blend mix)
- 4 tbsp butter
- 1 tbsp olive oil
- 1 large red potato, peeled and chopped into 1 in. cubes
- 1 1/2 tsp creole seasoning (divided)
- 1 lb. medium shrimp (70/90 ct.)
- 14.5 oz. can whole kernel corn, drained
- 14.5 oz. can cream-style corn
- 4 oz. cream cheese, cubed
- 2 cups half and half
- Optional: Chopped fresh parsley
Instructions
- In a large pot, melt butter and olive oil together.
- Add onions, bell peppers, celery, and potato. Sauté for 10 minutes, adding 3/4 tsp of creole seasoning.
- Sprinkle the remaining creole seasoning on the shrimp, then mix into the veggies. Cook for 4 to 5 minutes over medium to medium-high heat.
- Stir in the corn, cream cheese, and half and half. Bring to a gentle simmer, stirring until the cream cheese melts. Cook on low until smooth.
- Garnish with fresh parsley if you like.
- This soup pairs nicely with bread and a salad.
