- 1 ½ cups chicken broth
- 1 lb cheese tortellini
- 1 cup mozzarella cheese, shredded
- ½ cup heavy cream
- 2 cups baby spinach
- ⅓ cup Parmesan cheese, grated
Instructions
- Lightly coat the slow cooker with olive oil.
- Place the chicken breasts in a single layer.
- Pour the marinara sauce and spices over the chicken.
- Cover and set the slow cooker to LOW for 4 hours.
- Use forks to shred the cooked chicken.
- Mix the shredded chicken back into the sauce.
- Add the tortellini, mozzarella, and heavy cream, stirring everything together.
- Cook on LOW for an additional 30 minutes.
- Stir in the spinach and cook for another 10 minutes.
- Mix in Parmesan cheese, taste, and adjust the seasoning as needed.
