  1. Cut the chicken breasts in half lengthwise to create 4 thinner cutlets. Remove any fat, season with salt, pepper, and garlic powder, then coat in flour.
  2. In a skillet over medium-high heat, melt 2 tablespoons of butter with olive oil.
  3. Once hot, cook the chicken for 4-5 minutes on each side until golden brown. Move to a plate.
  4. Remove the skillet from heat and add chicken broth, lemon juice, lemon zest, the remaining butter, and capers. Scrape up any browned bits.
  5. Stir in the cream and return the skillet to heat. When bubbling, add the chicken back in. For a cream-free version, use 3/4 cup chicken broth instead.
  6. Cook for another 5 minutes until the chicken is done and the sauce thickens to your preference. Adjust the heat if it's boiling too hard. Add more broth if needed.
  7. Top with freshly chopped parsley and/or parmesan cheese if you like.
