Ingredients
- 1 pound large shrimp
- ¼ cup olive oil
- ¼ cup fresh cilantro (finely chopped)
- ¼ cup fresh parsley (finely chopped)
- 4 cloves garlic (minced)
- 1 tablespoon lemon juice
- ½ teaspoon salt
- ¼ teaspoon black pepper

Instructions
- In a small bowl, combine olive oil, lemon juice, herbs, garlic, and spices. Whisk until blended.
- Put the shrimp in a bowl and pour on ¾ of the marinade. Gently mix to coat, cover, and let marinate for 30 minutes to an hour.
- Skewer the shrimp, making sure to grab all the tasty garlic and herbs from the marinade bowl.
- Preheat your grill or grill pan to medium-high. Cook the shrimp skewers for 2 to 3 minutes on each side, until they’re pink and opaque.
- Transfer the shrimp to a plate and drizzle the remaining marinade on top before serving.
