  1. Slice the chicken breasts in half lengthwise to create cutlets. Place them between plastic wrap and gently pound to about ¼ inch thick. You should have 6 cutlets.
  2. Set your oven to 425°F and line a baking sheet with parchment paper.
  3. Grab three large shallow bowls and set them out.
  4. Fill the first bowl with whole wheat flour.
  5. In the second bowl, crack the eggs and whisk them together.
  6. Combine bread crumbs, parmesan cheese, pepper, dried basil, and dried parsley in the third bowl.
  7. Create a little assembly line with your bowls. Coat each chicken cutlet in flour, dip in egg, then cover with the bread crumb mixture. Press gently to adhere. Repeat for all cutlets.
  8. Arrange the breaded cutlets on the baking sheet. Bake for 15 minutes, flip them, and bake for another 15 minutes.
  9. After 30 minutes of baking, top each cutlet with about ¼ cup tomato sauce and ¼ cup shredded mozzarella. Broil for about 2 minutes until the cheese melts.
  10. Serve the chicken over pasta or a fresh salad.
