- 1 1/2 cups strawberries, hulled and diced
- 2 Tbsp honey
- 1/2 cup granulated sugar
- 1 tsp lemon juice
- 1 cup heavy whipping cream
- 1/2 cup half and half
- 1 tsp vanilla extract
Instructions
- In a big bowl, combine strawberries, honey, sugar, and lemon juice. Let it sit for 15-20 minutes to release the juices.
- Use a potato masher, fork, or pastry cutter to mash the mixture until no large strawberry pieces remain. For a smoother ice cream, blend it.
- Add heavy cream, half and half, and vanilla extract to the strawberries. Stir gently until everything is mixed well.
- Transfer the mixture to your ice cream maker and follow the instructions. It should churn for about 15-20 minutes. Enjoy it soft-serve, or freeze in an airtight container for 3-4 hours to thicken. Let it sit for 5-10 minutes at room temperature before serving.
