  1. Sprinkle salt and pepper on the chicken. Place it in your 6-qt slow cooker.
  2. Add chicken stock, wild rice, garlic, onion, carrots, celery, thyme, rosemary, and bay leaves. Season with salt and pepper. Cover and cook on low for 6-8 hours. Toss in mushrooms during the last 30 minutes.
  3. Take the chicken out and shred it with two forks.
  4. In a saucepan over medium heat, melt butter. Whisk in flour until it’s lightly browned, about 1 minute. Gradually add milk and half and half, whisking until slightly thickened, about 4-5 minutes. Season with salt and pepper.
  5. Mix the shredded chicken and milk mixture back into the slow cooker. If it’s too thick, add more half and half until you reach your preferred consistency.
  6. Serve hot, and sprinkle with parsley if you like.
