  1. Start by pouring half the canned tomatoes into your slow cooker, spreading them out evenly. Add half the peppers and onions, then sprinkle in the garlic. Place the chicken breasts on top.
  2. In a bowl, mix together the chili powder, cumin, paprika, coriander, salt, and pepper. Sprinkle half of this seasoning over the chicken, flip it, and add the rest. Layer the remaining tomatoes, peppers, and onions on top.
  3. Cover the slow cooker and cook on HIGH for 2 - 3 hours or LOW for 4 - 6 hours, until the chicken is fully cooked and the veggies are tender.
  4. Take the chicken out and slice it into strips or shred it. Remove 1 cup of the broth from the slow cooker (mostly tomato liquid) and discard it.
  5. In a small bowl, whisk together lime juice and honey. Add this to the slow cooker along with the chicken, and season with extra salt if needed. Toss gently and serve warm in tortillas with optional toppings.
