Ingredients
- 1 cup cottage cheese (full fat 2-4% works best)
- 2 Tbsp maple syrup
- 1 tsp pure vanilla extract
- 1 1/2 cups almond flour (Or heat treated all purpose flour for a smoother texture.)
- 1/4 cup vanilla protein powder
- 1 1/2 cups chocolate chips (divided)
- 1 tsp coconut oil
Instructions
- Blend the cottage cheese in a blender or food processor until smooth.
- In a medium bowl, mix all ingredients together, keeping 1 cup of chocolate chips aside.
- Chill the mixture for at least 30 minutes to help it firm up.
- Prepare a baking sheet by lining it with parchment paper.
- Scoop out portions with a cookie scoop and roll them into balls.
- Arrange the balls on the baking sheet and transfer to the freezer.
- Freeze for a minimum of 20 minutes.
- In a microwave-safe bowl, melt the remaining chocolate chips in 15-second intervals, stirring each time.
- Dip each ball into the melted chocolate, coating them well, then place back on parchment paper.
- Chill until the chocolate sets.
- Store in an airtight container in the fridge or freezer.
