- 2 cups chopped nuts (walnuts, almonds or pecans)
- 1 tsp cinnamon
- 1/4 cup coconut oil
- 1/3 cup honey (or maple syrup, if vegan)
- 1 tbsp vanilla
Instructions
- Start by preheating your oven to 300°F and lining a baking pan with parchment paper.
- In a big bowl, combine your dry ingredients: oats, nuts, and cinnamon. Mix well.
- Melt your coconut oil in a microwave-safe bowl for about a minute. Stir in the honey, then warm it again for 30-60 seconds. Add the vanilla and mix.
- Pour the wet mixture over the dry ingredients and stir until everything is well coated. Spread the granola evenly on the pan. Bake for 25-30 minutes until the edges start to brown. It will crisp up as it cools.
